Eggs: The Gateway to our homesteading

Eggs are the first food item we have on this farm.  Wait, that’s not true – I have had a garden here since I moved here – so summer of 2006. The eggs the chickens are the first animal food we have on this farm and good gravy do we have a lot of them in the summer when the girls are laying.

Just yesterday I gathered 11 eggs from the chicken coop and we only have 9 hens!  In the summer it is hard to keep up with all the eggs that we have but we make it work, we give a lot away and we eat a ton. Quiche turns out to be a quick and easy meal for us in the summer, breakfast for dinner is one of my favorites and egg salad is always at the ready for when you need a quick-lunch sandwich.  Who knew the incredible edible egg would be the gateway to our homesteading lifestyle!
